Stacked Spring Strawberry Cream Cheese Cake
Ingredients
For Frosting:
- 2 (8-oz) packages of cream cheese, room temperature
- 1 cup (2 sticks) unsalted butter, room temperature
- 4 cups powdered sugar
- 1/2 cup seedless strawberry jam
- 3/4 cup chilled heavy whipping cream
For Cake:
- 3 cups cake flour
- 3/4 tsp salt
- 1/2 tsp baking powder
- 1/2 tsp baking soda
- 3 cups sugar
- 1 cup (2 sticks) unsalted butter, room temperature
- 7 large eggs
- 2 tbsp vanilla extract
- 1 cup sour cream
- 6 tbsp plus 1/3 cup strawberry jam
- 6 cups strawberries, hulled and sliced (about 2 1/4 lbs)
Instructions
To Make Frosting
- Place a mixing bowl in the freezer to chill. In a separate large bowl using an electric mixer beat cream cheese and butter until smooth. Beat in sugar and then jam. Use chilled bowl to beat the whip cream until peaks form.
- Fold whipped cream into frosting. Cover and chill for a few hours until firm and spreadable.
To Make Cake
- Preheat the oven to 325 F and grease two 9-inch cake pans. In a mixing bowl whisk together flour, salt, baking powder, and baking soda. In a separate bowl, cream butter and sugar until light and fluffy. Slowly add in eggs, beating well after each addition.
- To avoid over-mixing the cake and making it too fluffy, beat the rest of the ingredients by hand) Beat in vanilla and then sour cream. Slowly add in flour mixture, blending well. Divide batter into pans.
- Bake cake for about 35 mins or until toothpick comes out clean. Remove from oven and cool for 10 mins. Run a knife around the cakes to avoid them from sticking to the edges of the pans and turn out onto rack to cool. Place in the fridge to cool faster.
- Use a long, sharp knife to cut each cake layer horizontally into two layers, making two layers in total. Place one layer on a cake plate and spread 2 tbsp of strawberry jam over the cake layer, then spread 3/4 cup of the frosting over the jam. Arrange 3/4 cup of the sliced strawberries on top of the frosting in a single layer.
- Repeat with the next cake layer, jam, frosting, and strawberries.
- Top with remaining cake layer, playing the cut side down. Spread the rest of the frosting over the top and sides of the cake.
Notes
Before serving, sprinkle sliced strawberries on top of the cake. Don't do this the night before or else the juices will run down the sides of your cake!
