Funfetti Sprinkle Brithday Cupcakes

Ingredients
For Cupcakes:
- 1/2 cup butter
- 1 cup sugar
- 2 eggs
- 1 tbsp vanilla extract
- 1 1/2 cups flour
- 1 tsp baking powder
- 1/3 cup milk
- 1/3 cup sprinkles + more for frosting
For Vanilla Buttercream Frosting:
- 1 cup of butter, softened
- 2 1/2 cups powdered sugar
- 1 tbsp vanilla extract
- 1 tbsp of milk or water
Instructions
To Make Cupcakes
- Preheat over to 350 F. In a large mixing bowl using an electric mixer, cream the butter and sugar for 3 mins, or until fluffy. Slowly add in eggs and vanilla and beat until well combined.
- In a separate bowl, combine the sugar, flour, and baking powder. Add half of the dry ingredients into the wet mixture and mix until combined. Add in the milk and then the rest of the dry ingredients. Fold in the sprinkles and pour into cupcake cups.
- Bake for about 18-20 mins and then remove from oven and allow to cool completely.
To Make Vanilla Buttercream Frosting
- In the bowl of an electric mixer, cream butter until smooth and creamy. On low speed, slowly add in the powdered sugar.
- Slowly increase mixer speed and beat in vanilla for 2-3 mins. Make sure to scrape down the sides to evenly combine all the ingredients.
- The frosting should be creamy and smooth. If it’s too thick, add in 1 tsp of milk at a time or add in sugar to thicken if too thin.
To Decorate
- Pipe or spread the vanilla buttercream over the cupcakes in a swirl. Sprinkle with sprinkles.
