Pounded Plantain Fritters with Shrimp Sauce
- 1 unripe Plantain
- 1 ripe Plantain
- 1 teaspoon Ginger powder
- 2 pieces fresh Pepper
- Pinch of crayfish seasoning to taste
- Salt to taste
Instructions
- Peel, wash, cut into small cylindrical shapes and boil the plantain till soft
- Heat vegetable oil till hot and fry the plantains till light brown. The unripe ones will be crispy on the outside
- Pound the plantains with ginger, pepper, salt and seasoning . Pound till all ingredients are well blended for about 2 minutes
- Pat the plantain mash into small circles
- Heat the oil again till very hot. Fry the fritters till golden brown
- Serve with Shrimp Stew.
How to make Shrimp Stew
- Blend together 4 pieces medium size Tomato, 4 pieces fresh Pepper, half medium size Onion, 2 bulbs of Garlic
- Boil tomato mix till water dries up
- Heat 2 tablespoons vegetable oil, fry remaining half of Onion
- Add the boiled tomato and fry
- Season the sauce with crayfish seasoning and salt and fry for about 5 minutes
- Add 1.5 cups fresh dressed Shrimps to the sauce, lower the heat and cook for about 10 minutes. Add Partminger leaves and cook for just 1 minute and the sauce is ready.
