Nigerian Pancake
Ingredients
- 1 cup of all purpose flour
- 1/2 cup of milk
- 1/4 cup of sugar
- 2 eggs
- 3 tablespoons of melted butter
- 1/2 teaspoon of baking powder (you can reduce it if you want your pancakes flatter)
- 1/2 teaspoon of vanilla extract
- a pinch of salt
Instructions
- In a bowl pour in flour, baking powder, sugar and salt.
- Pour in your melted butter and mix into the dry ingredients.
- In a separate bowl, whisk your egg, milk and vanilla extract.
- Pour in your egg mix into the flour and combine till smooth but slightly thick.
- Heat up your pan and lightly grease. With a spoon, slowly pour in your mix into little circles and fry on medium heat till brown on both sides. Serve warm.
