Molasses Quick-Brined Pork Chops
Servings: 4-8
Ingredients
- 1/4 cup Himalayan pink salt
- 1/4 cup organic molasses
- 2 whole cloves
- 1 Ceylon cinnamon stick
- 1 cup of organic apple juice
- 1 cup of boiled water
- 2 cups of cold, filtered water
- 4 huge, like 10-12ish ounce, pork chops {bone-in or not; center cut is preferable, but sirloin is also fine}
- 1 teaspoon avocado, macadamia, or olive oil
Instructions
- In a large stainless steel mixing bowl, combine the boiling water, salt, molasses, cloves, cinnamon stick. Stir until the salt and molasses have dissolved and the spices have mulled.
- Add the cold water and apple juice to the bowl and stir well.
- Drown your pork chops in the sweet pool of molasses-y goodness. Cover the bowl with a towel and pop it in the fridge for at least 1-2 {but up to 6} hours.
- Remove the chops from their delicious bath and pat them dry with a kitchen towel. Lightly brush each side with some oil.
- Heat a large {I use a 15-inch} cast-iron skillet over medium/high heat.
- Pop the chops onto the skillet and sear each side for 2-3 minutes, or until nicely browned.
- Reduce heat to medium and cook for about 5 more minutes on each side, or until a meat thermometer reads 140F.
- Remove to a serving tray and allow the chops to sit for and additional 5-10 minutes, or until the thermometer reads 145F.
- Plate and EAT.
