Molasses Quick-Brined Pork Chops

Servings: 4-8

Ingredients
  • 1/4 cup Himalayan pink salt
  • 1/4 cup organic molasses
  • 2 whole cloves
  • 1 Ceylon cinnamon stick
  • 1 cup of organic apple juice
  • 1 cup of boiled water
  • 2 cups of cold, filtered water
  • 4 huge, like 10-12ish ounce, pork chops {bone-in or not; center cut is preferable, but sirloin is also fine}
  • 1 teaspoon avocado, macadamia, or olive oil

Instructions
  1. In a large stainless steel mixing bowl, combine the boiling water, salt, molasses, cloves, cinnamon stick. Stir until the salt and molasses have dissolved and the spices have mulled.
  2. Add the cold water and apple juice to the bowl and stir well.
  3. Drown your pork chops in the sweet pool of molasses-y goodness. Cover the bowl with a towel and pop it in the fridge for at least 1-2 {but up to 6} hours.
  4. Remove the chops from their delicious bath and pat them dry with a kitchen towel. Lightly brush each side with some oil.
  5. Heat a large {I use a 15-inch} cast-iron skillet over medium/high heat.
  6. Pop the chops onto the skillet and sear each side for 2-3 minutes, or until nicely browned.
  7. Reduce heat to medium and cook for about 5 more minutes on each side, or until a meat thermometer reads 140F.
  8. Remove to a serving tray and allow the chops to sit for and additional 5-10 minutes, or until the thermometer reads 145F.
  9. Plate and EAT.
