Serves: 4

Ingredients
  • 1 large potato
  • 2 large carrots
  • ¼ pound of fresh green peas
  • 2 quarts of vegetable broth
  • 1 quart of low fat milk
  • Fresh parsley
  • Oregano
  • Herb de Provence
  • Baked croutons
  • Low fat Cheddar cheese
  • Salt and pepper, to taste

Instructions
  1. The preparation of the soup begins by soaking the peas in water for a few minutes. As the peas are soaking peel the carrots and potatoes after washing them thoroughly. Chop the vegetables into small pieces, and add them to the pot with the peas.
  2. Once the vegetables have soaked for a few minutes with the peas, drain the water and place the pot on the stove. Pour the vegetable broth into the pot, and turn the heat to high.
  3. Bring the vegetable broth to a boil, and pour in the low fat milk. Once the milk begins to boil, add the oregano and Herb de Provence. Chop the fresh parsley and add it to the soup as well as salt and pepper as your heart desires.
  4. Once the vegetables are cooked, serve the soup into individual bowls. Top with a few baked croutons and grated low fat cheddar cheese.
