Chick Pea Soup

Serves: 4

Ingredients
  • ½ pound of chick peas
  • ½ pound of beef ribs
  • 2 quarts of chicken stock
  • 1 teaspoon of cumin
  • 1 lemon
  • Salt and pepper, to taste
  • Croutons
  • 1 sprig of dill

Instructions
  1. To prepare the peas, place them in a pot with the chicken stock, and let them sit and soak for a couple of hours. This will help them to cook much faster, and soaking them in the chicken stock will infuse them with the chicken flavor.
  2. Once the peas have soaked, put the pot on the stove to boil. Let the broth come to a boil on high heat, and add the beef ribs to the pot.
  3. Continue cooking the peas until the ribs are thoroughly cooked, and add the salt and pepper as desired. Let the soup boil for a few minutes more, then add the spoonful of cumin. Squeeze the lemon into the soup, and let it boil for another minute or two.
  4. Serve the soup into individual bowls, add a few croutons, and garnish each bowl with a sprig of dill.
