Raw Chocolate Cheesecake
Ingredients
Crust
- 1 cup Almonds (soaked & dehydrated)
- 2 cups Desiccated Coconut
- ¼ cup Raw Cacao Powder
- 1 cup Raisins
- ¼ tsp Salt
- 2 ½ tbsp Coconut Oil
- 2 tbsp Coconut Nectar
- 1 tsp Vanilla Extract
Filling
- 2 cups Coconut Water
- ¾ cup Raw Cacao Powder
- 2 cups Cashews (soaked)
- ¾ cup Liquid Sweetener of Choice
- ¼ cup Irish Moss Paste (1 part Water : 2 parts Soaked Irish Moss)
- ½ Coconut Oil
- ½ cup Cacao Butter
- 1 cup Young Coconut Meat
- 3 ½ tbsp Lemon Juice
- 1 tbsp Light Miso
- 1 tbsp Lecithin Granules
- ¼ tsp Salt
- 2 tsp Vanilla Extract
Garnish
- ¼ cup Cacao Nibs
Instructions
- Blitz almonds until a meal consistency is achieved.
- Add remaining crust ingredients and blitz until the mixture sticks between your fingers easily.
- Wipe down 10” Springform Pan with coconut oil.
- Press crust into bottom and sides of pan about ¾ of the way up.
- Blend all crust ingredients except coconut oil and melted cacao butter until smooth and creamy.
- Add cacao butter and coconut oil and blend until smooth.
- Pour filling into crust and let set in fridge for 6-8 hours or freezer for 3-4.
- Garnish with cacao nibs and shredded coconut.
