Ingredients
Crust

  • 1 cup Almonds (soaked & dehydrated)
  • 2 cups Desiccated Coconut
  • ¼ cup Raw Cacao Powder
  • 1 cup Raisins
  • ¼ tsp Salt
  • 2 ½ tbsp Coconut Oil
  • 2 tbsp Coconut Nectar
  • 1 tsp Vanilla Extract

Filling

  • 2 cups Coconut Water
  • ¾ cup Raw Cacao Powder
  • 2 cups Cashews (soaked)
  • ¾ cup Liquid Sweetener of Choice
  • ¼ cup Irish Moss Paste (1 part Water : 2 parts Soaked Irish Moss)
  • ½ Coconut Oil
  • ½ cup Cacao Butter
  • 1 cup Young Coconut Meat
  • 3 ½ tbsp Lemon Juice
  • 1 tbsp Light Miso
  • 1 tbsp Lecithin Granules
  • ¼ tsp Salt
  • 2 tsp Vanilla Extract

Garnish

  • ¼ cup Cacao Nibs

Instructions

  1. Blitz almonds until a meal consistency is achieved.
  2. Add remaining crust ingredients and blitz until the mixture sticks between your fingers easily.
  3. Wipe down 10” Springform Pan with coconut oil.
  4. Press crust into bottom and sides of pan about ¾ of the way up.
  5. Blend all crust ingredients except coconut oil and melted cacao butter until smooth and creamy.
  6. Add cacao butter and coconut oil and blend until smooth.
  7. Pour filling into crust and let set in fridge for 6-8 hours or freezer for 3-4.
  8. Garnish with cacao nibs and shredded coconut.
  9. Slice, Serve and pay attention to the way Raw Chocolate makes you feel!
