Quick Chicken Soup with Lemon
Serves: 4
Ingredients
- 1 cup raw chicken breast
- 1 chopped chili pepper
- ½ cup frozen corn kernels
- 1½ cups chicken broth
- ½ cup dry white wine
- 3 minced scallions
- 1 tablespoon chopped ginger
- 3 chopped cloves garlic
- Zest and juice from half a lemon
- 3 tablespoons minced fresh cilantro, plus whole sprigs for garnish
Instructions
- Add the wine, broth, garlic, ginger, chili, scallions, and chicken to a pot.
- Bring the mixture to a boil.
- Cook for 4 minutes then turn the heat down to a simmer and cook until the chicken is done.
- Skim the chicken fat off the top of the soup.
- Shred the chicken using a fork, then put it back in the pot.
- Add the corn kernels and cilantro and cook for a couple of minutes or until the corn is tender.
- Add the lemon zest and juice, stir and serve, garnished with the cilantro sprigs.
