Quick Chicken Soup with Lemon
Quick Chicken Soup with Lemon

Serves: 4

Ingredients
  • 1 cup raw chicken breast
  • 1 chopped chili pepper
  • ½ cup frozen corn kernels
  • 1½ cups chicken broth
  • ½ cup dry white wine
  • 3 minced scallions
  • 1 tablespoon chopped ginger
  • 3 chopped cloves garlic
  • Zest and juice from half a lemon
  • 3 tablespoons minced fresh cilantro, plus whole sprigs for garnish

Instructions
  1. Add the wine, broth, garlic, ginger, chili, scallions, and chicken to a pot.
  2. Bring the mixture to a boil.
  3. Cook for 4 minutes then turn the heat down to a simmer and cook until the chicken is done.
  4. Skim the chicken fat off the top of the soup.
  5. Shred the chicken using a fork, then put it back in the pot.
  6. Add the corn kernels and cilantro and cook for a couple of minutes or until the corn is tender.
  7. Add the lemon zest and juice, stir and serve, garnished with the cilantro sprigs.
