Triple Chocolate Cookie Bars
Serves: 28
Ingredients
For crust
- 2 cup all-purpose flour
- 1 cup unsweetened cocoa powder
- ½ cup granulated sugar
- ½ cup unsalted butter, softened
- ¼ cup 0% plain greek yogurt
For cookie
- ½ cup unsalted butter, softened
- ½ cup light brown sugar
- ½ cup granulated sugar
- 2 large eggs
- 1 tsp vanilla extract
- ¼ cup 0% plain greek yogurt
- 2¼ cup all-purpose flour
- 1 tsp baking soda
- ½ tsp salt
- 10 oz semi sweet chocolate chips
For Ganache
- 4 oz bittersweet chocolate chips
- 2 tbsp heavy whipping cream
Instructions
For crust
- Preheat oven to 350.
- Coat a 9 x 13 inch square baking pan with non-stick cooking spray.
- Combine flour and cocoa in large mixing bowl with a whisk.
- In a mixer cream the butter and sugar. Add in the yogurt and blend until combined.
- Add in the flour mixture, blending just until combined.
- Press mixture with fingers into even layer over the bottom of the pan.
- Bake for 15 minutes.
For Cookie
- Cream butter and sugar together in a mixer.
- Add eggs, vanilla, and yogurt; blend until combined.
- Slowly add in flour, baking soda, and salt. Mix until combined.
- Stir in chocolate chips.
- Spread dough onto warm crust and bake for 30 minutes.
- Let cool at least 10 minutes.
For ganache
- In a small saucepan combine bitter-sweet chocolate and heavy whipping cream over medium heat.
- Stir constantly until chocolate is melted. It should look smooth and shiny.
- Drizzle over cookie bars.
- Cut bars in 7 strips on the long side and divide into 4 sections on the shorter side of the pan.
- Makes 28 bars.
