Lemon Curd Cookies

Yield: 3 dozen

Ingredients
  • ¼ pound (1 stick) unsalted butter, room temperature
  • ½ cup sugar
  • 1 egg yolk
  • 1 teaspoon pure vanilla extract
  • 1¼ cups all-purpose flour
  • ¼ teaspoon salt
  • Lemon Curd

Instructions
  1. In the bowl of an electric mixer beat together butter and sugar on medium speed until light and fluffy, about 3 minutes. Add egg yolk and vanilla; beat well. Whisk together flour and salt, and add to mixture, beating on low until combined.
  2. Chill dough for at least 1 hour.
  3. Preheat oven to 350 degrees.
  4. Form dough into 1-inch balls. Place balls on parchment-lined baking sheet.
  5. Make a deep indentation in the center of each ball with your thumb. I use a cork, it the perfect for uniform circles. Take care not to press down too hard or the cookie will break apart.
  6. Using a piping bag, fill center of each cookie with lemon curd.
  7. Bake for 10-12 minutes. Remove from oven, and place on a wire rack to cool.
