Makes about 30 cookies

Ingredients
  • 1 cup vegan granulated sugar
  • 1 cup vegan margarine
  • 2 tsp vanilla extract
  • 1 tbsp flaxseed meal mixed with 2 tbsp water
  • 1 cup sorghum flour
  • 1 cup chickpea flour
  • 1 cup potato starch
  • 1 1/2 tsp xanthan gum
  • candy coated fennel seeds
  • extra sparkly vegan sprinkles (optional)

Instructions
  1. Preheat oven to 400 °F.
  2. Cream together margarine, sugar, and vanilla extract. Add in prepared flaxseed meal.
  3. In separate bowl, sift together sorghum flour, chickpea flour, xanthan gum and potato starch.  Mix on medium low speed with creamed margarine mixture until stiff dough forms. Pat into a disk and chill in freezer for a few minutes until very cold. You can also chill the dough in the fridge for about 2-3 hours.
  4. Roll cookies out onto lightly (sorghum) floured surface until about 1/4-1/2 inch thick. Cut out cookies using star shaped cookie cutters.
  5. Decorate with candy coated fennel seeds. I had to actually meticulously “place” mine on the cookies… and this was the most intense part of making these guys. I also sprinkled half of them with some cute vegan sparkle edible glitter stuff.
  6. Bake in preheated oven for 7-8 minutes. Less cooking time will be needed for thinner cookies.
