Cheddar Buttermilk Biscuits

Ingredients
  • 2½ cups all purpose flour
  • ¼ cup sugar
  • 1 Tbsp double acting baking powder
  • ½ tsp kosher salt
  • 4 Tbsp unsalted butter, cold and cubed
  • 1 cup sharp cheddar cheese, shredded
  • 1 large egg, beaten
  • 1 cup buttermilk

Instructions
  1. In a large mixing bowl sift together flour, baking powder, sugar and salt. Cut in cold butter using a pastry blender, fork, or by rubbing the butter into the flour to form small grain size pieces.
  2. Add the cheese to the flour mixture, stir.
  3. Lightly beat a large egg in a small bowl. Measure 1 cup of buttermilk and add beaten egg, stir together. Pour milk mixture into flour and stir just until moistened with a fork.
  4. Using a muffin scoop or ice cream scoop drop dough onto a lined baking sheet or use a silpat.
  5. Place pan into the refrigerator and chill while oven is preheating to 350º F.
  6. Bake for 10-12 minutes or until tops begin to brown.
