Bacon Wrapped Avocado Wedges

Ingredients
  • 1 large organic Hass avocado, cut into about 6-8 wedges
  • 6-8 slices (or more; read on) of thick cut, uncured bacon
  • 1 tablespoon of balsamic (or none, if you prefer)

Instructions
  1. Preheat a large skillet over medium heat. I use a cast iron skillet, but encourage you to use whichever type of skillet that your heart desires.
  2. Carefully wrap the avocado wedges in the bacon slices – one to two per wedge, depending on the thickness of the cut and the size of your wedge.
  3. Carefully place each wrapped wedge in the skillet and allow to cook, turning each a quarter-turn every few minutes to ensure that all sides are cooked.
  4. Drain, plate, and drizzle with balsamic (or not)
