Durian Chocolate Mesquite Truffles
Ingredients
Truffles
- 1 cup Cashews (soaked & dehydrated)
- 1 cup Durian
- 1 c Dates (soaked in water for 10-20 mins)
- ¾ cup Cacao Powder
- ¾ cup Mesquite Powder
- 2 tbsp Liquid Sweetener of Choice
- 2 tbsp Coconut Oil
- ½ tsp Vanilla Extract
- a Pinch of Salt
- 2 tsp Lemon Juice
Coating
- ¼ cup Cacao Powder
- 1 tsp Cinnamon
Instructions
- Blitz nuts in food processor until a meal consistency is achieved.
- Add remaining truffle ingredients and blitz until smooth and creamy.
- Put in freezer for 20-30 minutes then roll into balls and coat in cacao powder cinnamon mix.
- Eat immediately!
