Chunky Pea Soup

Serves: 4

Ingredients
  • ½ pound of split peas
  • 1 large can of green peas
  • 3 carrots
  • 2 potatoes
  • ½ pound of ham
  • 1 quart of chicken broth
  • 1 quart of milk
  • Crushed red pepper
  • Salt and pepper, to taste

Instructions
  1. Before you can cook the peas, you will need to soak them in water for an hour. This ensures that they cook properly and much more quickly.
  2. Once the peas have finished soaking, drain the water and fill the pot with the chicken stock. Place it on the stove to boil, and bring it to a simmer.
  3. As the chicken broth is heating, chop one onion and three cloves of garlic. Fry them in a skillet and add them into the soup.
  4. Once the broth is simmering, add the milk.
  5. As the milk is heating in the soup, peel and chop the carrots and potatoes to be added to the soup.
  6. Dice the ham into small, bite-sized chunks. Fry the ham lightly in a skillet, and add it to the soup as well.
  7. Once the milk is boiling, add the salt and pepper as desired, as well as a pinch of crushed red pepper.
  8. Let the pea soup cook for 45 minutes.
  9. Open the can of peas, drain the liquid, and add to the soup. Let the soup cook for 10 minutes more.
