Garlic Chickpea Soup

Serves: 4

Ingredients
  • ½ pound of chick peas
  • 2 quarts of chicken broth
  • 3 heads of garlic
  • 2 large potatoes
  • ¼ pound of fresh uncooked green peas
  • Sour cream
  • Croutons
  • Salt and pepper, to taste

Instructions
  1. To begin, pour the chicken broth into a pot, and add the chick peas to the pot. Put it aside to soak as you peel the garlic, and add one head of peeled garlic into the pot to soak.
  2. As the peas soak, peel the other two heads of garlic, and peel and chop the potato.
  3. Once the peas are soaked, place the pot with the garlic and peas on the stove to heat, and add the potatoes and another head of garlic. Bring the pot of soup to a boil, and cook it until the peas and potatoes are cooked.
  4. Use a stick blender or food processor to puree the soup, and let it heat once more.
  5. Chop the garlic into small pieces, and toast it in a frying pan. Steam the fresh peas lightly until they are cooked.
  6. Serve the soup into bowls, add a spoon of cream, a sprinkling of garlic, and a few peas.
