Soup and Chickpeas
Serves: 4
Ingredients
- ½ pound of chickpeas
- 2 pounds of chicken bones or meat
- Fennel
- 1 lemon
- Salt and pepper, to taste
Instructions
- To begin, place the chickpeas in a pot of water to soak as you work with the chicken.
- Place the chicken bones or meat into a pot with water, and place it on the stove to boil. Bring the pot to a boil, and let it cook the chicken until all of the flavor has been wrung out of the bones. Throw away the bones or refrigerate the meat, and use a strainer to get rid of the oil and scum at the top of your soup.
- Drain the water from the chickpeas, and place them in the pot of chicken broth to cook. Add fennel to enhance the flavor of the chicken, and grind some fresh black pepper into the pot. Add a spritz of lemon and a tablespoon of salt, and let the soup cook for an hour or until the chickpeas are soft.
