Chick Peas Soup
Serves: 4
Ingredients
- ½ pound of chick peas
- 2 quarts of beef broth
- 2 tablespoons of heavy sour cream
- 1 bundle of fresh parsley
- 1 lemon
- 1 teaspoon of curry powder
- Salt and pepper, to taste
Instructions
- Before you can start cooking the chick peas, you will need to soak them in water for an hour. This helps to reduce the cooking time for the peas and helps them absorb the flavors more easily.
- As the chick peas soak, place the beef broth in a pot on the stove to heat, and bring it to a boil. Add the lemon and curry powder, and do not skimp out on the salt and pepper.
- Once the peas have soaked and the broth is boiling, drain the peas thoroughly. Add the drained peas to the soup, and let it cook for 35 minutes.
- Chop the parsley as finely as possible, and add it to the soup to infuse it with the unique flavors. Add the teaspoon full of curry powder, and stir in the sour cream. Let the soup cook for 10 or 15 minutes more, and serve into bowls while still hot.
