Avocado Strawberry Lime Ice Cream
Ingredients
- 1 lb strawberries
- 1/2 cup sugar
- zest of 1 lime
- 1/2 cup fresh lime juice
- 2 large avocados
- 1/4 cup tequila (optional but highly recommended)
Instructions
- Wash and hull strawberries, then slice. Toss with sugar, lime zest, and lime juice and let sit for at least 10 minutes to let the strawberries macerate.
- Add the macerated strawberries to a food processor or blender along with the flesh of the avocados and tequila. Blend until smooth, then pour into a shallow pan or into your ice cream maker. If using an ice cream maker, follow the manufacturer's instructions before freezing.
- If you don't have an ice cream maker, place the shallow pan in the freezer, then remove after about 30 minutes. Use a large fork or sturdy spoon to churn the ice cream, being sure to blend any frozen bits in with the rest of the mixture. This helps to ensure a smoother, creamier ice cream. Repeat this process until the ice cream is too thick to churn, then freeze until solid. When ready to serve, let the ice cream sit out for about 5 minutes before scooping to let it soften slightly. Store ice cream in an airtight container in the freezer for up to 2 months.
