Strawberry Cheesecake Graham Chunk Ice Cream

Serves 6

Ingredients
Graham Cracker Crust
  • 1/4 cup graham wafer crumbs
  • 1/2 tablespoon sugar
  • 1 tbp butter

Ice Cream
  • 1 8oz package cream cheese, softened
  • 1 14oz can sweetened condensed milk
  • 1/3 cup whipping cream
  • 2 tsp lemon zest
  • 2 cups fresh strawberries
  • 1/3-1/2 cup prepared graham cracker crust broken into pieces (from below recipe)

Instructions
Graham Cracker Crust
  1. Mix wafer crumbs, sugar, and butter in a bowl.
  2. Press the mixture onto the bottom of a baking pan.
  3. Bake in a preheated 350F oven until golden brown, about 10-15 minutes.
  4. Let cool completely.

Ice Cream
  1. With an electric mixture, mix the cream cheese, sweetened condensed milk, lemon zest, and whipping cream until combined. Freeze for 4 hours or until half way frozen.
  2. Remove the mixture from the freezer and beat until creamy. Using a blender, blend the berries as much as you like, some like almost-whole berries in their ice cream.
  3. Add the berries to the cream cheese mixture and add in the chopped graham cracker crust and mix well. Freeze for 8 hours or until firm.
  4. To serve, remove the ice cream from the freezer and let it soften for about 15 minutes before scooping.
