Lasagna Soup

Serves: 4-6

Ingredients
  • 16 oz ground mild Italian sausage
  • 1 Tbsp Olive oil
  • 1 cup onion, diced
  • 1 cup baby carrots, sliced
  • 2 cups cremini mushrooms, sliced
  • 2 cloves garlic, minced
  • 6 cups reduced sodium chicken broth
  • 1 (14½ ounce) can diced tomatoes
  • 1 (8 ounce) can tomato sauce
  • 1 tsp dried basil
  • 1 tsp dried oregano
  • 2 cups campanelle pasta
  • 2 cups fresh baby spinach

Instructions
  1. Brown sausage in a large saucepan over medium-high heat. Break up sausage with the back of a wooden spoon. Drain any fat that may be in saucepan.
  2. Add oil to saucepan and sauté onions and carrots until onions are translucent, about 3 minutes.
  3. Add the garlic and sauté until fragrant.
  4. Add in the mushrooms and saute another 3 minutes.
  5. Add broth, tomato. tomato sauce,and seasonings; bring to a boil.
  6. Drop in pasta and simmer until cooked, about 10 minutes, or according to package directions.
  7. Stir in spinach and cook until slightly wilted.
  8. Serve immediately.
