Lasagna Soup
Serves: 4-6
Ingredients
- 16 oz ground mild Italian sausage
- 1 Tbsp Olive oil
- 1 cup onion, diced
- 1 cup baby carrots, sliced
- 2 cups cremini mushrooms, sliced
- 2 cloves garlic, minced
- 6 cups reduced sodium chicken broth
- 1 (14½ ounce) can diced tomatoes
- 1 (8 ounce) can tomato sauce
- 1 tsp dried basil
- 1 tsp dried oregano
- 2 cups campanelle pasta
- 2 cups fresh baby spinach
Instructions
- Brown sausage in a large saucepan over medium-high heat. Break up sausage with the back of a wooden spoon. Drain any fat that may be in saucepan.
- Add oil to saucepan and sauté onions and carrots until onions are translucent, about 3 minutes.
- Add the garlic and sauté until fragrant.
- Add in the mushrooms and saute another 3 minutes.
- Add broth, tomato. tomato sauce,and seasonings; bring to a boil.
- Drop in pasta and simmer until cooked, about 10 minutes, or according to package directions.
- Stir in spinach and cook until slightly wilted.
- Serve immediately.
