Beans Potato Coconut Pottage

Serves 4

Ingredient
  • 11/2 cups Beans
  • 8 pieces Irish Potato
  • 4 Beef sausages
  • 4 strips Bacon (optional)
  • 2 cooking spoon Tomato/ Pepper blend
  • 2 cooking spoons diced Carrots
  • 1 whole Onion( chopped)
  • 4 cups Coconut milk
  • Chicken seasoning to taste
  • Salt to taste

Instructions
  1. Grate coconut flesh and squeeze out the milk and set side. Squeeze more milk than the recipe calls for as some beans are harder and you may need more liquid to get the beans very soft.
  2. Wash the beans and pour into the coconut milk, add the tomato/pepper mix, onion, seasoning and cook till very soft .
  3. Half way through cooking  the beans, add the peeled and washed potatoes and the bacon .Taste and correct seasoning .
  4. If you are using bacon avoid adding salt to the dish until you have tasted ,as bacon comes with quite some salt.
  5. Cook pottage till potato and beans are soft
  6. Add the sausage and carrots and cook for 3 minutes
  7. Serve hot .
