Basil Ice Cream
Servings: 6
Ingredients
- 1 cup chopped basil leaves
- 1 cup light coconut milk
- 1 cup coconut cream
- ½ cup grade B maple syrup
- Zest of one lime
- Pinch of salt
- 3 egg yolks
Instructions
- Combine all ingredients in a blender or food processor and puree until smooth.
- Pour into a saucepan over medium-low heat and cook, stirring frequently, for about 5 minutes.
- Remove from heat and cover. Place in refrigerator until completely chilled (2-3 hours).
- Process in an ice cream maker according to manufacturer’s instructions.
- Serve immediately or freeze. If freezing, remove about 10 minutes prior to serving to soften.
