Gently Spiced Asparagus Soup with Potato
Serves: 4
Ingredients
- 1 lb peeled white asparagus, in 1 inch pieces
- 3 thinly sliced green onions
- ½ chopped onion
- 1 minced garlic clove
- 4 cups chicken broth
- 1 cup diced peeled potato
- ¾ teaspoon Creole seasoning
- ½ teaspoon white sugar
- 1 bay leaf
- 1 chopped, de-seeded peeled tomato
- 4 tablespoons butter
- ½ teaspoon dried thyme
- 1 cup heavy cream
- Ground nutmeg, to taste
- Fresh chopped parsley and croutons, for garnish (optional)
Instructions
- Melt the butter in a pot over a moderately low heat.
- Add the onions and sauté them for 3 minutes.
- Add the garlic and cook for 1 minute.
- Add the potato, asparagus, tomato, broth, bay leaf, thyme, sugar, and Creole seasoning and bring to a boil.
- Turn the heat down to a simmer.
- Cover and cook until the potatoes are soft. Remove the bay leaf.
- Puree the soup in the blender, in batches. Add the nutmeg and cream and warm through.
- Garnish with croutons and fresh parsley, if you like.
