Gently Spiced Asparagus Soup with Potato

Serves: 4

Ingredients
  • 1 lb peeled white asparagus, in 1 inch pieces
  • 3 thinly sliced green onions
  • ½ chopped onion
  • 1 minced garlic clove
  • 4 cups chicken broth
  • 1 cup diced peeled potato
  • ¾ teaspoon Creole seasoning
  • ½ teaspoon white sugar
  • 1 bay leaf
  • 1 chopped, de-seeded peeled tomato
  • 4 tablespoons butter
  • ½ teaspoon dried thyme
  • 1 cup heavy cream
  • Ground nutmeg, to taste
  • Fresh chopped parsley and croutons, for garnish (optional)

Instructions
  1. Melt the butter in a pot over a moderately low heat.
  2. Add the onions and sauté them for 3 minutes.
  3. Add the garlic and cook for 1 minute.
  4. Add the potato, asparagus, tomato, broth, bay leaf, thyme, sugar, and Creole seasoning and bring to a boil.
  5. Turn the heat down to a simmer.
  6. Cover and cook until the potatoes are soft. Remove the bay leaf.
  7. Puree the soup in the blender, in batches. Add the nutmeg and cream and warm through.
  8. Garnish with croutons and fresh parsley, if you like.
