Avocado and Corn Salad with Creamy Avocado Dressing
Ingredients
For the Salad
- 2 hass avocados, chopped
- 1 large tomato, chopped
- 1/2 onion, chopped
- 2 ears of corn, oven roasted and kernels removed
- the juice of 1 lime
- olive oil
- salt and pepper
- 1 large head of romaine lettuce, chopped
For the Dressing
- 2 hass avocados
- 1/4 cup mayonnaise
- 1/4 cup milk
- the juice of 1 lime
- 1/4 teaspoon garlic powder 1/4 teaspoon onion powder
- 1/2 teaspoon cumin
Instructions
For the Salad
- Preheat oven to 400 degrees. Drizzle olive oil on corn and add salt and pepper. Roast at 400 degrees for 15 - 20 minutes, or until kernels are tender crisp. Cut kernels off corn cob.
- Add chopped lettuce to a large salad bowl. Add chopped tomato, onion and corn kernels. Add avocado and lime juice.
For the Dressing
- Add all ingredients for dressing to a food processor. Turn on high and blend until creamy and smooth. Add dressing to salad and toss if desired.
