Triple Chocolate Peanut Buttercream Bingo Party Cupcakes

Ingredients
Cupcakes:
- 3 eggs, room temp
- 6 oz bittersweet chocolate, chopped
- 1/2 cup butter, cubed
- 3 tbsp creme de cacao
- 1/2 cup all-purpose flour
- 1/2 tsp baking powder
- 1/4 tsp salt
- 1/2 cup sugar
- 1 tsp vanilla
Peanut Butter Buttercream Frosting
- 1/4 cup plus 2 tbsp vegetable shortening
- 1/4 cup plus 2 tbsp salted butter, softened
- 1/2 cup creamy peanut butter
- 1 tsp of vanilla
- 3 - 4 cups (approx. .75 - 1 lb.) powdered sugar
- 3 - 4 tbsp milk
Instructions
To Make Cupcakes
- Preheat oven to 350F and line a cupcake pan with 12 cupcake cups.
- Separate the egg yolks from the egg whites, set aside. In a saucepan over medium heat combine the 6 oz of chocolate and the butter. Cook and stir until melted then stir in creme de cacao.
- In a small bowl stir together flour, baking powder, and salt. Set aside.
- In a large mixing bowl with an electric mixer on high, beat egg yolks and sugar until thick and lemon color. Beat in chocolate mixture and vanilla. Add flour mixture, beating just until combined; set aside.
- Wash beaters and then in a medium bowl beat the egg whites on high until stiff peaks form. Stir a small amount of the beaten egg whites into chocolate mixture to lighten. Fold in the remaining beaten egg whites.
- Spoon batter into the prepared cupcake cups and bake for 15-18 mins. Cool cupcakes on wire racks for 5 mins.
To Make Buttercream Frosting
- In a mixing bowl using an electric mixer, cream shortening and butter until combined. Add peanut butter and vanilla and mix well.
- Gradually add powdered sugar, one cup at a time, beating well after each cup.
- Stir in milk, 1 tbsp at a time until you get the desired consistency you are looking for.
- Pipe over cupcakes and decorate with bingo decorations of your choice.
