Spicy Fried Tilapia with Oven Roast Plantain
Ingredients
- 4 pieces medium size Tilapia Fish
- Lemon Grass leaves( Optional)
- 1 tablespoon Ginger Powder
- 1 teaspoon dry Pepper
- Seasoning to taste
- Salt to taste
- 2 cloves Garlic
- 1/2 medium size Onion
- 1/2 cup Scotch Bonnet Pepper ( ripe and unripe)
- Lemon Grass
- 1/2 cup Olive Oil
- Vegetable oil for frying
Instructions
- Make slits on the side of the fish, season with salt, ginger,dry pepper and a little seasoning cube . Rub in the seasoning in very well into fish.
- If you are using lemon grass just stuff it in the mouth of the fish down to the stomach to add that lemony flavor to the fish
- Allow fish to marinade for about 30 – 45 minutes before frying
- Heat the oil and deep fry till golden brown but not dry. You want the fish cooked browned but not dry. It should still be moist
- Serve with raw Pepper dip and roast plantain
How to make Pepper Dip
- Blend or pound pepper, onion, garlic , seasoning and a little salt. Blend or pound to a rough texture.
- Scoop pepper into a bowl and add the olive oil and mix.
How to make Roast Plantain
- Peel plantain, cut into big chunks and roast in oven at gas mark 350 or until golden brown.
