Pounded Plantain Fritters with Shrimp Sauce


Ingredients

  • 1 unripe Plantain
  • 1 ripe Plantain
  • 1 teaspoon Ginger powder
  • 2 pieces fresh Pepper
  • Pinch of crayfish seasoning to taste
  • Salt to taste

Instructions

  1. Peel, wash, cut into small cylindrical shapes and boil the plantain till soft
  2. Heat vegetable oil till hot and fry the plantains till light brown. The unripe ones will be crispy on the outside
  3. Pound the plantains with ginger, pepper, salt and seasoning . Pound till all ingredients are well blended for about 2 minutes
  4. Pat the plantain mash into small circles
  5. Heat the oil again till very hot. Fry the fritters  till golden brown
  6. Serve with Shrimp Stew.

How to make Shrimp Stew

  1. Blend together 4 pieces medium size Tomato, 4 pieces fresh Pepper, half medium size Onion, 2 bulbs of Garlic
  2. Boil tomato mix till water dries up
  3. Heat 2 tablespoons vegetable oil, fry remaining half of Onion
  4. Add the boiled tomato and fry
  5. Season the sauce with crayfish seasoning and salt and fry for about 5 minutes
  6. Add 1.5 cups fresh dressed Shrimps to the sauce, lower the heat and cook for about 10 minutes. Add Partminger leaves and cook for just 1 minute and the sauce is ready.
