Paleo Almond Joy Cookies
Ingredients
For the cookies
- 1 c organic creamy almond butter, well stirred
- 2 tbsp coconut oil
- ⅔ c honey
- 2 eggs
- 1 tsp vanilla extract
- 1 tsp baking soda
- 2 C almond flour
- ¼ c almond milk
- Pinch salt
For the coconut milk ganache
- 1 15oz can full fat Coconut milk
- 1 bag of Enjoy Life Mega Chocolate Chunks
- Coconut flakes for topping (I put them in the oven at 275 for about 15 minutes to toast, spread on baking sheet with parchment paper).
Instructions
- Preheat oven to 350
- Melt honey with almond butter and coconut oil in microwave, 30 seconds at a time, stirring in between
- Transfer to a larger bowl and use hand mixer to mix until creamy and then add egg, then vanilla
- Add in dry mix of baking soda, almond flour and salt to wet mix
- Add in the almond milk and mix until incorporated.
- Should be pretty thick, thick enough to scoop out and roll into balls to press onto parchment paper. (if not thick enough slowly add more almond flour). Bake cookies for approximate 10-12 minutes. Take out and let cool.
- Heat up coconut milk to simmer and pour over chocolate chips in a bowl. Wait a couple minutes then stir to incorporate/make ganache.
- Dip cooled cookies in ganache and top with toasted coconuts.
- Try not to drool all over yourself. Sooo good, even to non-paleo folks
