Makes 14 scones

Ingredients
  • 2 1/2 cups all-purpose flour
  • 2 tablespoons baking powder
  • 1/4 teaspoon salt
  • 1/4 cup granulated sugar
  • 1/2 cup cold butter
  • 1/2 sour cream
  • 1/2 cup evaporated milk
  • juice of half a lemon

Instructions
  1. Sift all the dry ingredients (flour, baking powder, salt and sugar) into a medium sized mixing bowl. Once all dry ingredients are well sifted and mixed, cut the cold butter into the flour mixture (you can either use a fork or a pastry cutter, I prefer not to mix the cold butter using hands as the heat from our hands will just melt the butter).
  2. In a separate bowl, combine sour cream, evaporated milk and lemon juice.
  3. Pour the sour cream mixture onto the flour mixture. Use a fork to briefly mix and form a dough. Once the mixture form into a dough, gently and only briefly knead dough and shape into a 1 inch thick disk. Cut heart shapes from the dough using a cookie cutter (you can always use the round shaped cutters if you prefer, I just like my scones to look even more cuter!)
  4. Place the cut-out scones onto a cookie sheet lined with baking parchment.
  5. Bake the scones in a 375’F/200’C oven for 20-25 minutes or until tops are lightly browned. Serve warm. Eat with a smear of good butter or clotted cream and your favorite fruit jam. Enjoy your tea time!
