Holiday Peach and Fig Ricotta Cake

Ingredients
  • 3 yellow peaches, ripe
  • 150g figs, ripe and a few pieces to garnish
  • 2 limes
  • 200g ricotta cheese
  • 200g thick cream
  • 100g ground almonds
  • 200g plain flour
  • 1 tsp baking powder
  • 220g granulated sugar
  • 150g butter, chopped
  • 2 eggs
  • 1 tsp vanilla extract
  • 1/2 teaspoon salt
  • icing sugar for dusting

Instructions
  1. Preheat oven to 350F. Grease and line a 8-9" spring form pan with parchment paper.
  2. Remove pits from peaches and cut into small pieces along with the figs. Zest with the limes.
  3. In a mixing bowl, use your fingers to combine flour, sugar, baking powder, salt, lime zest, almonds, butter and vanilla.
  4. Scoop out one cup of batter and reserve in the fridge for the crumble.
  5. Use a hand mixer and slowly add eggs and cream to the rest of the batter, mixing until creamy.
  6. Pour 1/2 of the batter into the cake pan and sprinkle 1/2 of the cut up fruits. Spread 1/2 of your ricotta.
  7. Pour remaining cake batter over the ricotta and then sprinkle over the remaining fruits and then the remaining ricotta cheese. Sprinkle the reserved crumble on top.
  8. Bake for about 1 hour 15 minutes, or until toothpick comes out clean.
  9. Remove from oven and allow to cool 15 mins in the pan before removing the outside ring of your spring form pan. Allow to cool completely before sprinkling witht powdered sugar and garnishing with figs.
