Fennel Seed Stars
Makes about 30 cookies
Ingredients
- 1 cup vegan granulated sugar
- 1 cup vegan margarine
- 2 tsp vanilla extract
- 1 tbsp flaxseed meal mixed with 2 tbsp water
- 1 cup sorghum flour
- 1 cup chickpea flour
- 1 cup potato starch
- 1 1/2 tsp xanthan gum
- candy coated fennel seeds
- extra sparkly vegan sprinkles (optional)
Instructions
- Preheat oven to 400 °F.
- Cream together margarine, sugar, and vanilla extract. Add in prepared flaxseed meal.
- In separate bowl, sift together sorghum flour, chickpea flour, xanthan gum and potato starch. Mix on medium low speed with creamed margarine mixture until stiff dough forms. Pat into a disk and chill in freezer for a few minutes until very cold. You can also chill the dough in the fridge for about 2-3 hours.
- Roll cookies out onto lightly (sorghum) floured surface until about 1/4-1/2 inch thick. Cut out cookies using star shaped cookie cutters.
- Decorate with candy coated fennel seeds. I had to actually meticulously “place” mine on the cookies… and this was the most intense part of making these guys. I also sprinkled half of them with some cute vegan sparkle edible glitter stuff.
- Bake in preheated oven for 7-8 minutes. Less cooking time will be needed for thinner cookies.
