Caramel and Chocolate Turtle Thumbprint Cookies

Ingredients
- 1 cup all-purpose flour
- 1/2 cup cocoa powder
- 3/4 tsp salt
- 1/2 cup unsalted butter, softened
- 1/2 cup + tbsp granulated sugar
- 1 egg
- 1 tbsp heavy cream
- 1 tsp vanilla extract
- 1/4 to 1/2 cup caramel sauce
- 1/4 pecans, chopped
- 1-2 oz dark chocolate, melted
Instructions
- Preheat oven 350F. Prepare baking sheet with parchment paper.
- In a bowl, combine flour, cocoa powder, and salt, set aside.
- In a large bowl using a mixer, cream butter and sugar until light and fluffy. Add egg, cream, and vanilla, stir until combined. Stir in flour mixture until combined.
- Roll balls using 1-2 tbsp of dough. Place 1" apart on baking sheet. Use your thumb to gently press center of each cookie to make an indent.
- Bake for about 10 mins and remove from oven. Immediately press centers again to maintain the indent. Cool for 2 mins and then transfer to wire rack.
- Once cooled, place several chopped pecan bits in each cookie. Spoon caramel into center of each cookie over the pecans. Drizzle cookies with melted dark chocolate and sprinkle with more pecans. Let them sit for 15 mins to set.
