Bacon Wrapped Avocado Wedges

Ingredients
- 1 large organic Hass avocado, cut into about 6-8 wedges
- 6-8 slices (or more; read on) of thick cut, uncured bacon
- 1 tablespoon of balsamic (or none, if you prefer)
Instructions
- Preheat a large skillet over medium heat. I use a cast iron skillet, but encourage you to use whichever type of skillet that your heart desires.
- Carefully wrap the avocado wedges in the bacon slices – one to two per wedge, depending on the thickness of the cut and the size of your wedge.
- Carefully place each wrapped wedge in the skillet and allow to cook, turning each a quarter-turn every few minutes to ensure that all sides are cooked.
- Drain, plate, and drizzle with balsamic (or not)
