Homemade Chicken Soup Recipe with Bell Peppers

Serves: 6
Ingredients
  • 1 lb boneless, skinless chicken breast
  • 1 chopped orange bell pepper
  • 1 chopped yellow bell pepper
  • Zest of 1 lemon
  • 1 diced onion
  • 1 de-seeded, chopped tomato
  • Juice of 2 lemons
  • 2 peeled, cubed potatoes
  • 8 oz sliced cremini mushrooms
  • 2 minced garlic cloves
  • 2 tablespoons butter
  • 4 cups chicken broth
  • 1 teaspoon dried basil
  • 3 tablespoons olive oil
  • 1 teaspoon garlic salt

Instructions
  1. Rub the garlic salt and black pepper over the chicken.
  2. Brown it in a soup pot in half the oil.
  3. Transfer the chicken to a bowl and add the rest of the oil and butter.
  4. Add the lemon zest, bell peppers, potatoes, tomato and mushrooms.
  5. Cook until the vegetables and potatoes are soft.
  6. Add the rest of the ingredients to the pot, as well as the chicken.
  7. Simmer for 20 minutes.
