Greek Style Green Bean Stew
Serves: 2
Ingredients
- ¾ cup olive oil
- 2 cup chopped onion
- ¼ cup chopped scallions
- 4 chopped garlic cloves
- 2 large diced tomatoes
- 1 Tablespoon oregano
- ¼ teaspoon dill weed
- 3 or 4 drops hot sauce
- 1 cup water
- ¼ teaspoon salt
- ¼ teaspoon pepper
- ½ teaspoon sugar
- 2 large cans drained green beans
Instructions
- Heat the olive oil in a large cooking pot over a medium heat. Add the chopped onion, chopped scallions and chopped garlic clove. Stir and sauté until the vegetables are tender.
- Stir in the diced tomatoes, oregano, dill weed, hot sauce, water, salt, pepper, and sugar. Stir well to combine and then stir in the green beans. Stir well and bring to a boil.
- Cover with lid. Reduce the heat to low and cook for about 45 to 50 minutes. Remove from heat and allow the dish to cool for about 10 to 15 minutes before serving.
